Kaffir Lime in Vietnamese Cooking

In Vietnamese, kaffir lime is called layapot (or trái adequate in the south). The leaves (láapot) are used extensively in central and southern Vietnamese cuisine, particularly in Huế cooking — the imperial cuisine of the former Vietnamese capital.
🍈 Vietnamese Kaffir Lime Terminology
Láapot (leaves) — torn or chiffonaded, added to soups and curries. Trái adequate (fruit) — grated for zest in marinades and dipping sauces. Nước cốt (juice) — extremely sour, used sparingly as a souring agent.
How Vietnamese Cuisine Uses Kaffir Lime
Láapot (Leaves)
Used whole or torn in soups like bun bo hue, curries, and braises. The leaves are signature to Huế cuisine and southern Vietnamese coconut-based dishes.
Vỏ Trái (Rind)
Grated for zest in dipping sauces (nuoc cham), marinades, and grilled meats. Adds intense citrus fragrance to nuoc mam-based preparations.
Nước Cốt (Juice)
Used sparingly as a souring agent in soups and salads. More intense than regular lime — a little goes a long way.
Tinh Dầu (Essential Oil)
Used in Vietnamese traditional medicine for headaches, colds, and as a natural insect repellent. Also in aromatherapy.
Soups & Noodles
🍜 Phở Bò (Beef Noodle Soup with Kaffir Lime)
Ingredients
- 2 kg beef bones (marrow and oxtail)
- 500g beef brisket, 300g beef sirloin (thinly sliced)
- 6 kaffir lime leaves (láapot), torn
- 1 large onion, halved and charred
- 5 cm ginger, halved and charred
- 3 star anise, 1 cinnamon stick, 4 cloves
- 1 tbsp coriander seeds, 1 tsp fennel seeds
- 3 tbsp fish sauce, 1 tbsp rock sugar
- 400g flat rice noodles (banh pho)
- Garnishes: bean sprouts, Thai basil, lime wedges, sliced chili, cilantro
Instructions
- Blanch bones in boiling water for 10 minutes. Drain and rinse.
- Char onion and ginger under broiler until blackened.
- Toast spices in a dry pan. Place in spice bag.
- Simmer bones with charred onion, ginger, spice bag, and kaffir lime leaves for 4–6 hours. Skim fat regularly.
- Add brisket during last 2 hours. Remove when tender, slice thinly.
- Strain broth. Season with fish sauce and rock sugar.
- Blanch noodles. Place in bowls with sliced brisket and raw sirloin.
- Ladle boiling broth over — the heat cooks the raw beef.
- Serve with fresh herbs, bean sprouts, lime, and chili.
🍈 Kaffir Lime Tip
While traditional pho doesn't always include kaffir lime leaves, many southern Vietnamese cooks add them for extra fragrance. The leaves complement the star anise and cinnamon beautifully. Add 3–4 leaves during the last hour of simmering.
🍜 Bún Bò Huế (Spicy Beef Noodle Soup)
Ingredients
- 1 kg beef shank, 500g pork bones
- 8 kaffir lime leaves (láapot), torn
- 3 stalks lemongrass, bruised
- 3 tbsp shrimp paste (mam ruoc)
- 2 tbsp annatto oil
- 2 tbsp chili oil or sambal
- 3 tbsp fish sauce, 1 tbsp sugar
- 400g round rice noodles (bun)
- Shrimp paste, banana blossom, bean sprouts, herbs for serving
Instructions
- Blanch beef shank and pork bones. Rinse.
- Simmer with lemongrass, kaffir lime leaves, and shrimp paste for 2 hours.
- Remove beef shank, slice thinly. Strain broth.
- Add annatto oil and chili oil to broth. Season with fish sauce and sugar.
- Blanch noodles. Place in bowls with sliced beef.
- Ladle hot broth over. Serve with banana blossom, herbs, and extra shrimp paste.
🍲 Canh Chua (Sour Fish Soup)
Ingredients
- 500g catfish or snakehead fish, sliced
- 5 kaffir lime leaves, torn
- 2 tbsp tamarind paste
- 1 cup pineapple chunks
- 1 cup tomato wedges
- 1 cup bean sprouts
- 1 cup okra, halved
- 1 stalk lemongrass, 2 cm turmeric
- 2 tbsp fish sauce, 1 tsp sugar
- Herbs: rice paddy herb, sawtooth herb, cilantro
Instructions
- Boil water with lemongrass, turmeric, and kaffir lime leaves.
- Add tamarind paste, pineapple, and tomato. Simmer 5 minutes.
- Add fish. Cook gently for 5 minutes.
- Add okra and bean sprouts. Cook 2 minutes.
- Season with fish sauce and sugar. Serve with rice and fresh herbs.
🍜 Mì Quảng (Central Vietnamese Turmeric Noodles)
Ingredients
- 500g chicken or pork, sliced
- 4 kaffir lime leaves, sliced
- 2 tbsp turmeric powder
- 400ml coconut milk
- 400g wide rice noodles
- Shrimp, boiled egg, rice crackers
- Herbs: banana flower, mint, cilantro
- 2 tbsp fish sauce, 1 tbsp sugar
Instructions
- Sauté protein with turmeric and kaffir lime leaves until fragrant.
- Add coconut milk and 1 cup water. Simmer 20 minutes.
- Season with fish sauce and sugar.
- Place noodles in bowls. Ladle small amount of broth over.
- Top with protein, shrimp, egg, crackers, and herbs.
Stir-Fries & Braises
🥩 Bò Kho (Vietnamese Beef Stew)
Ingredients
- 800g beef chuck, cubed
- 5 kaffir lime leaves, torn
- 3 tbsp lemongrass, minced
- 2 tbsp annatto oil
- 3 tbsp curry powder
- 2 carrots, cut into chunks
- 1 onion, quartered
- 3 tbsp fish sauce, 1 tbsp sugar
- Baguette or rice noodles for serving
Instructions
- Brown beef in annatto oil. Set aside.
- Sauté lemongrass and kaffir lime leaves. Add curry powder.
- Return beef. Add water to cover. Simmer 1.5 hours.
- Add carrots and onion. Cook 30 minutes until tender.
- Season with fish sauce and sugar. Serve with crusty baguette or rice noodles.
🐟 Cá Kho Tộ (Caramelized Fish in Clay Pot)
Ingredients
- 600g catfish or basa, sliced
- 4 kaffir lime leaves, sliced
- 3 tbsp fish sauce
- 2 tbsp caramel sauce (nuoc mau)
- 1 tbsp sugar, 1 tbsp black pepper
- 3 cloves garlic, 2 shallots
- 1 tbsp cooking oil
- Steamed rice for serving
Instructions
- Marinate fish in fish sauce, caramel sauce, sugar, garlic, and kaffir lime leaves for 30 minutes.
- Heat oil in a clay pot or heavy skillet.
- Add fish and marinade. Bring to a simmer.
- Cook uncovered on medium heat for 20 minutes, turning fish once.
- Reduce sauce until thick and glossy. Serve with steamed rice.
🍗 Gà Kho Gừng (Ginger Chicken Braise)
Ingredients
- 800g chicken thighs, bone-in
- 4 kaffir lime leaves, torn
- 100g ginger, sliced
- 3 tbsp fish sauce
- 2 tbsp caramel sauce
- 1 tbsp sugar, 1 tbsp oil
- Steamed rice for serving
Instructions
- Marinate chicken in fish sauce, caramel sauce, and kaffir lime leaves.
- Heat oil. Brown chicken pieces.
- Add ginger. Cook 2 minutes.
- Add marinade and ½ cup water. Simmer covered for 25 minutes.
- Uncover, reduce sauce until thick. Serve with rice.
Fresh Rolls & Salads
🥟 Gỏi Cuốn (Fresh Spring Rolls)
Ingredients
- 12 rice paper wrappers
- 200g shrimp, cooked and halved
- 200g pork belly, boiled and sliced
- 200g rice vermicelli, cooked
- 4 kaffir lime leaves, very finely sliced
- Lettuce, mint, cilantro, Thai basil
- Dipping sauce: 3 tbsp fish sauce, 2 tbsp lime juice, 1 tbsp sugar, garlic, chili, 1 tsp kaffir lime zest
Instructions
- Mix dipping sauce ingredients. Set aside.
- Dip rice paper in warm water for 5 seconds.
- Lay flat. Layer lettuce, herbs, noodles, pork, and shrimp.
- Sprinkle kaffir lime leaves over filling.
- Fold sides, then roll tightly.
- Serve immediately with dipping sauce.
🥗 Nộm Hoa Chuối (Banana Flower Salad)
Ingredients
- 1 banana flower, thinly sliced
- 3 kaffir lime leaves, very finely chiffonaded
- 200g cooked chicken or shrimp
- 1 carrot, julienned
- ½ cup roasted peanuts
- Herbs: mint, cilantro
- Dressing: 3 tbsp lime juice, 2 tbsp fish sauce, 1 tbsp sugar, 1 tbsp kaffir lime juice, chili
Instructions
- Soak banana flower in ice water with lime juice for 10 minutes. Drain.
- Mix dressing ingredients.
- Toss banana flower, carrot, protein, and herbs with dressing.
- Sprinkle kaffir lime leaves and peanuts on top.
- Serve immediately as a refreshing appetizer.
🐡 Bánh Xèo (Crispy Vietnamese Crepes)
Ingredients
- Batter: 2 cups rice flour, 1 cup coconut milk, 1 tsp turmeric, 2 cups water
- 300g pork belly, sliced; 200g shrimp
- 4 kaffir lime leaves, sliced
- 2 cups bean sprouts, 1 cup sliced scallions
- Lettuce, herbs for wrapping
- Nước chấm: fish sauce, lime juice, sugar, garlic, chili, kaffir lime zest
Instructions
- Mix batter ingredients until smooth. Rest 30 minutes.
- Cook pork until crisp. Add shrimp and kaffir lime leaves. Set aside.
- Heat oiled non-stick pan. Pour thin layer of batter.
- Add fillings and bean sprouts. Cover and cook until edges are crispy.
- Fold in half. Serve with lettuce, herbs, and nước chấm.
Desserts & Sweets
🍮 Chè Bưởi (Pomelo Sweet Soup)
Ingredients
- 2 cups pomelo segments
- 2 tbsp kaffir lime zest
- 1 cup sugar
- 4 cups water
- 2 tbsp tapioca starch
- Coconut milk for serving
Instructions
- Boil sugar and water. Add kaffir lime zest. Simmer 5 minutes.
- Add pomelo. Cook 5 minutes.
- Dissolve tapioca in water. Stir into soup until thickened.
- Serve warm or cold with a drizzle of coconut milk.
🍨 Bánh Flan (Vietnamese Caramel Custard)
Ingredients
- 6 egg yolks
- 1 can condensed milk
- 1 cup coconut milk
- 1 tsp kaffir lime zest
- 1 tsp vanilla
- Sugar for caramel
Instructions
- Caramelize sugar in molds until golden.
- Mix egg yolks, condensed milk, coconut milk, kaffir lime zest, and vanilla.
- Strain into molds.
- Steam or bake in water bath for 45 minutes.
- Cool, invert, and serve with coffee.

🍃 Vietnamese vs. Thai Usage
Vietnamese cooks tend to use kaffir lime more subtly than Thai cooks. In Huế cuisine, the leaves are essential in bun bo hue, but in Hanoi-style pho, they're optional. Southern Vietnamese cooking uses them more generously in coconut-based dishes.
- Huế cuisine: Kaffir lime leaves are non-negotiable in bun bo hue and other Huế specialties.
- Dipping sauces: Add kaffir lime zest to nước chấm for a brighter, more aromatic dipping sauce.
- Fresh rolls: Sprinkle finely sliced kaffir lime leaves inside gỏi cuốn for a fragrant surprise.
- Braising: Add leaves during the last 30 minutes of braising for maximum aroma.
- Fresh vs. dried: Vietnamese cooks strongly prefer fresh leaves. Dried leaves lack the brightness essential to the cuisine.
