How kaffir lime is used: The leaves (bai makrut) are torn or chiffonaded and added to curries, soups, and stir-fries. The rind is pounded into curry pastes. The juice adds sourness to salads and dipping sauces. In Thai cuisine, kaffir lime is one of the "holy trinity" alongside lemongrass and galangal.
